Rainbow Quiche

Use wilted kale or spinach alone, or use a variety of colorful vegetables to add color, flavor and nutrients to this yummy quiche. Some suggestions: yellow, red and orange bell pepper, asparagus, mushroom, broccoli, greens like kale, spinach, rainbow chard, onion, and more.

Sauté diced veggie, turkey or chicken sausage (nitrate free) until browned. In a separate skillet pan, sauté the harder vegetables like asparagus, bell pepper and broccoli in olive oil before adding softer vegetables like greens and mushrooms for about 5-8 minutes total. Add some Kosher salt, sea salt or Himalayan pink salt for flavor. Add crushed red pepper and garlic powder as desired. Add the sausage pieces to the vegetables. Pour in enough scrambled eggs or egg whites (or a combo of both) to almost cover the sausage and vegetable pieces (about 6 eggs). Sprinkle parmesan cheese or mozzarella cheese (dairy free versions exist too) on top if desired. Place in oven at 400 degrees for about a half hour until set. Let quiche cool about 5-10 minutes before digging in!
