Flaming Hot Chicken Tacos

We used 1.5 lbs of thin chicken cutlets for our family of four. First, place the chicken on a baking sheet and drizzle with Sriracha or any sauce of your choice. Bake for 30 minutes at 375 degrees.

To prepare the tortillas, spray or brush each side with olive oil and gently place in the tortilla shell makers (available on Amazon!). Bake the tortillas on 375 degrees for 15-20 minutes until golden and crispy!  Making your own baked tortilla shells is a great, healthy option to buying fried tortilla shells.

Shred the chicken after cooking, and prepare the fillings of your choice. We used chopped white onion, fresh cilantro, mild salsa, Tofutti dairy-free sour cream, diced avocado, crumbled feta cheese, Mrs. Renfro’s jarred jalepeno peppers (our favorite brand!), and a lime squeeze 🙂

*Whenever possible, include deep green leafy vegetables like cilantro or arugula in recipes to add texture and antioxidants.
